Flatbreads in Canton offers a dining experience unlike any other in Connecticut. The restaurant is all wood-fired, with two pizza ovens, a grill and a bubbling cauldron. The staff are committed to local and organic farming. Cans of organic tomatoes are stacked in the dining area and organic spices fill a rack above a dining table. Signs name the local farms that supply ingredients for the meals.
"Our philosophy is about life, love, and how we want to be treated," says Manager Brian Bienvenue. "We're committed to organic and local farming because it is better for ourselves and our air, water, land and animals. Our customers can see every aspect of what we do, from our supplies to our pizza chefs and even into our walk-in cooler. We want them to know they can trust that we are bringing them the best, healthiest ingredients."
At Flatbreads, "the sights, smells and activities are all part of the experience," says Brian. There's a stone bench in front of the big wood fired oven where customers can see their meal take shape right before their eyes, and stare into the glowing oven while their organic pizza, sprinkled with locally grown toppings, is transformed by the hot fire. "Every night that bench is filled with kids watching us make our pizzas," says Brian.
Flatbreads also wants to share its bounty with the larger community. "It makes me feel good that there are so many farms here," says Brian. "Spending money on your next door neighbor is the wise thing to do." Flatbreads also hosts a benefit for a community organization every Tuesday night.
